How to Make a Low-Carb Snack: Cauliflower Popcorn

Popcorn is a very tempting snack when dieting. Although it may seem like a good snack, popcorn is still high in carbohydrates. Cauliflower popcorn can be a good alternative.

Cauliflower Popcorn Ingredients:
1 pound fresh cauliflower
2 tablespoons oil
4 teaspoons Mrs. Dash Table Blend seasoning
Salt, to taste
Pinch granular Nectresse (optional)

Also Needed:
Large Mixing Bowl
Baking sheet
Oven (Capable of 400º)

Step 1 Cut the cauliflower into smaller bite-size pieces and put in a large mixing bowl.

Step 2 Drizzle oil over the cauliflower then sprinkle with Mrs. Dash and a little salt. Toss the cauliflower well in the bowl until the oil and salt is mixed evenly.

Step 3 Line the baking sheet with foil and spread in a single layer on the baking sheet.

Step 4 Bake at 400º 50-60 minutes, turning them over every 15 minutes.

Step 5 Bake until very dark brown, but not completely burnt.

Step 6 Taste and sprinkle with more salt, if needed, and a very light dusting of granular Nectresse if desired. The Nectresse helps cut the bitterness of the charred cauliflower.
